Soya Lecithin is yellow to brown semi-solid or lumps of phospholipids extracted and refined from soybeans. They are esters composed of glycerol, fatty acids, choline or cholamine, and are known as the “third nutrients” alongside proteins and vitamins. The composition of soybean Lecithin is complex, calculated as anhydrous matter, containing phosphorus (P) no less than 2.7%, nitrogen (N) should be 1.5-2.0%, containing phosphatidylcholine(PC) 45-80%, containing phosphatidyl ethanolamine(PE) 3-20%, containing phosphatidylcholine(PC) and phosphatidylethanolamine(PE) no less than 70%.<\/p>\n\n
